happy hour: cider rum punch

We had a lot of fun coming up with (and testing) this cocktail. The classic cold weather combo of apples and cinnamon paired with the heat of spiced rum make this a great cocktail to warm up your blood on a cold winter night. Besides being delicious, it's easy to make, great for a holiday get together, perfect to assemble ahead of time, and the recipe can be scaled up or down.

Cider Rum Punch

3 cups sparkling apple cider
3 cups hard apple cider (2 12 ounce bottles--we used Angry Orchard)
1 1/4 cups spiced rum
1 1/2 teaspoon vanilla extract
1 apple, sliced
6 cinnamon sticks

Place apple slices and cinnamon sticks in a punch bowl or pitcher.  Pour in rum, vanilla, and both ciders.  Stir, then serve.  The flavors are even better after the apples and cinnamon sticks have had a while to soak, so if you want, you can throw together the apples, cinnamon sticks, rum, and vanilla ahead of time, and add the ciders just before serving.  Enjoy!
