cherry tomatoes with goat cheese and rosemary

When you're putting together a huge holiday meal for the whole family, it's nice to have a few side dishes that can be made quickly without much preparation. This dish takes very little time and effort but your guests will never know. Warm, toasty goat cheese and juicy tomatoes make for a wonderfully flavorful, yet beautifully simple little dish. Not only is it great for a holiday meal, it doubles as the perfect brunch food, served with eggs and toast. 

Cherry Tomatoes with Goat Cheese and Rosemary

1.25 lbs (2 10 oz. packages) cherry tomatoes
10 oz goat cheese
1.5 tsp chopped fresh rosemary
black pepper

Place cherry tomatoes in an 11 x 7 inch baking pan. Crumble goat cheese over tomatoes (Tip: freeze your cheese for about 10 minutes and it will crumble perfectly). Sprinkle rosemary and freshly cracked pepper over the top. Broil on high for 20 minutes or until cheese is browned.
