happy hour: frozen gin & tonic

It seems like everyone is welcoming fall, but here in Louisville summer is still hanging on.  Before chilly mornings and shorter days completely replace our seemingly endless, swampy summer, I came up with a summery variation on an already summery drink, the gin & tonic.

Although, let's be clear: I will drink a gin & tonic any day of the year.

Anyway, this version requires some planning ahead, but it's well worth it whether you sip these in your bikini or a sweater.

frozen gin & tonic

tonic water
1 1/2 oz gin
1/4 lime

Fill an ice cube tray with tonic water.  Try not to fill each well all the way.  Allow to freeze overnight.

Place tonic ice cubes in a blender (a food processor will do, as I used here, but a blender will give you a smoother result) along with gin and juice of 1/4 lime.  Blend until smooth.  Makes one drink.

Add a straw and lime wedge garnish if desired.  Enjoy!
